During the 19th century, some models of evaporators are used to produce maple syrup without however being very effective. It is only in 1882, in Ohio, United States, that Gustave Henry Grimm develops an evaporator more adapted. This one proposes a greater surface of evaporation and thus an optimal efficiency.
