In June 1977, Shigeru Hirai opened he very first Fujiya store in Japan Town at 423 Powell St in Vancouver. But he felt in order to have authentic Japanese food cooked to finite perfection, it was necessary to bring in and sponsor Japanese chefs from Japan. - Many of these chefs have gone on to open up their own popular Japanese restaurants in the city.
