When I opened my restaurant La Bella Managua in 2005, Nicaraguan food was completely unknown in Toronto. Nicaraguan cuisine draws on almost every aspect of Latin American cooking styles, but it puts a unique twist on certain flavours. Hinting at the tuber-based indigenous cuisine found in places like Brazil and Ecuador, I prepare sautéed sweet plantains and a dish of crispy fried marinated pork chunks and coleslaw atop steamed white yucca root. Gallo pinto, the Nicaraguan take on the Caribbean staple of rice and beans, involves mixing the ingredients into a red and black?flecked mashup, and Central American influence is also apparent on the menu in the form of tacos and quesadillas, and habañero peppers in the homemade salsa. People wanted to eat what they already knew. Slowly, customer by customer, word spread?first among Nicaraguans telling other Latin Americans, then among people telling their Canadian-born friends.
Patio now open. At Adega (meaning wine cellar), they have taken old recipes and cooking techniques and matched them with modern flavours and other complimentary styles of cuisine. Some dishes need no refining at all and are served in their authentic form. Adega's specialty is seafood and they source it from all over the world: fresh fish from Portugal & Azores Islands, Canadian Maritime Lobster, Norwegian Cod, Tunisian Octopus, Thai Tiger Shrimp, etc. Their daily featured items include fine meats such as Rack of Lamb, Veal Chop and Beef Tenderloin grilled with Mediterranean marinades and spices. n 1981, the Canadian Paraplegic Association investigated this issue by contacting some patients at Lyndhurst Rehabilitation Hospital to try and help them determine their needs. The patients had recently sustained spinal cord injuries and would be requiring wheelchair accessible housing with attendant services. It was very evident that there was a shortage of appropriate accommodations. Existing support service projects had extensive waiting lists with a possible vacancy of 1 - 2 per years. Many people were having to face the grim possibility of chronic care institutions, or having to move home to inaccessible environments and put the onus on family members for assistance; hence the birth of Nucleus. That group of patients were the founding consumers of Nucleus. We first requested a meeting with Jackie Rodgers who was with the Accommodation and Support Service Committee of the Ontario Advisory Council for Physically Disabled. Following this informative meeting, we realized that we would require a well-developed strategy if we were to achieve our goal to live independently in the community and that we were responsible to do it on our own
