Restaurant Shalimar was started in 1990 by Mrs. Uma Nigam, with the assistance of her son Jyoti Nigam. Using knowledge gleaned from her upbringing in Northern India, Uma was the first to bring Indian cuisine to the Sherbrooke region. Over the years, Shalimar has been able to adapt and improve its cuisine according to the refining tastes of its clientele, particularly vegetarians and vegans.
