Passionfruit drink

Ingredients:

  • Pulp of 12 passionfruits
  • 10 ml (2 tsp) citric acid
  • 500 ml (2 c) sugar
  1. Combine ingredients in a bowl and pour 600 millilitres (2 1/2 cups) of boiling water over them.
  2. When cold, strain and bottle.
  3. To drink, mix a small amount with water.

Tropical fruit drink

Ingredients:

  • 1 large ripe pineapple
  • 8 large oranges
  • 8 passionfruit
  1. Peel and core the pineapple.
  2. Cut the flesh into pieces and purée in a blender until smooth.
  3. Pass through a sieve to remove fibres.
  4. Cut the oranges in half and squeeze and strain the juice; you will need about 900 millilitres (3 3/4 cups).
  5. Halve the passionfruit and scoop out the seeds into a sieve placed over a bowl. Mash the seeds into the sieve to extract all the juice.
  6. Mix the juices in a jug. Serve with ice. Makes six 125 millilitre (half cup) servings.
